Meal Planning Monday: 7th October 2013

After a number of meat-filled recipes in the last couple of weeks & preparing the boys with a Winter wardrobe eating up the pennies lately, I need to keep the costs down a bit on the food front. For that reason, I am going with mainly vegetarian meals this week. There's plenty of tasty options out there and here's what I've picked for the boys and I to eat for the week. Yum!

Broccoli pesto pasta, recipe here
Courgette fritters with salad, recipe here
Sweet potato & parsnip bake, recipe here
One-pot Moroccan chicken, recipe here
Salmon, broccoli & potato bake, recipe here
Baked aubergine stuffed with roast pumpkin, feta & walnut with minted courgettes, recipe here

  2. We are doing mostly veggie this week too, love the sound of the sweet potato and parsnip bake, wonder if I could sneak it past my Mr, he hates parsnips.

    1. Hmmm that may be a little problematic if he hates parsnip, but worth a try ;)

We're having chicken and chick pea curry tonight... as soon as I can be bothered to go start chopping onions.
